  • 2 bell peppers (1 red, 1 yellow)
  • 1 large yellow onion
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • 8 small flour or corn tortillas
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut chicken into strips and slice bell peppers and onion into thin pieces.
