Ingredients

Scale
  • 1 pound shrimp (peeled and deveined)
  • 8 ounces spaghetti or fettuccine
  • 4 cloves garlic (minced)
  • 3 tablespoons extra virgin olive oil
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh parsley (chopped)
  • Juice of 1 lemon
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare your ingredients: clean and thaw shrimp if using frozen; measure out pasta.
  2. Cook the pasta: Boil salted water and cook pasta according to package instructions until al dente (about 8-10 minutes).
  3. Sauté garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add shrimp and tomatoes: Toss in shrimp and halved cherry tomatoes; cook until shrimp is pink and opaque (3-4 minutes), stirring occasionally.
  5. Combine everything: Drain pasta but reserve some water. Add cooked pasta to the skillet with shrimp mixture, along with lemon juice and parsley. Mix well, adding reserved pasta water if too dry.
  6. Serve immediately: Plate the dish, garnishing with extra parsley and red pepper flakes if desired.
