  • 8 oz penne pasta
  • 1 cup heavy cream
  • 2 cups fresh baby spinach
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the smoked sausage into bite-sized pieces, dice the onion, and mince the garlic.
  2. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve some pasta water before draining.
  3. In a large skillet over medium heat, add olive oil and sauté the smoked sausage until golden brown. Add onion and garlic; cook until fragrant.
  4. Lower heat and stir in heavy cream; simmer gently. Add grated Parmesan cheese until melted.
  5. Fold in spinach until wilted, then add drained pasta. Mix thoroughly, adding reserved pasta water for desired consistency.
  6. Serve hot with extra Parmesan cheese and freshly cracked pepper.
