Sticky toffee pudding is a comforting classic that combines a moist sponge cake infused with rich, caramel-like toffee sauce.   • 200g Medjool dates
  • 250ml boiling water
  • 75g unsalted butter, room temperature
  • 150g brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 250ml heavy cream
  • 150g dark brown sugar
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 180°C (350°F). Pit and chop the dates, then soak them in boiling water for about 10 minutes.
  2. Blend the soaked dates with the water until smooth.
  3. In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, followed by vanilla extract.
  5. Gently fold in flour and baking powder until just combined.
  6. Pour the batter into a greased baking dish and bake for 30-35 minutes or until golden brown.
  7. For the sauce: combine heavy cream and dark brown sugar over medium heat until bubbling, stirring continuously for about 5 minutes.
  8. Once baked, let the pudding cool slightly before drenching it with toffee sauce.
