  • 8 oz cream cheese (softened)
  • 1 tsp garlic powder
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil (plus more for searing)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice a pocket into each chicken breast without cutting through completely.
  2. In a skillet over medium heat, warm olive oil and sauté fresh spinach until wilted (about 2-3 minutes).
  3. In a bowl, mix sautéed spinach, cream cheese, mozzarella, garlic powder, Italian seasoning, salt, and pepper until well combined.
