  • 4 large bell peppers (red, yellow, or green)
  • 1 cup cooked long-grain rice
  • 1 lb lean ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup pasta sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off each bell pepper and remove seeds.
  3. In a skillet over medium heat, sauté diced onion and minced garlic until soft (about 5 minutes).
  4. Add ground meat and cook until browned (7-10 minutes). Stir in cooked rice.
  5. Mix in pasta sauce, oregano, basil, salt, and pepper until evenly combined.
  6. Fill each pepper with the mixture and place upright in a baking dish.
  7. Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
