This delightful casserole features layers of sticky sushi rice, fresh fish, and rich toppings, all baked to golden perfection.   • 1 cup sushi rice
  • 1/4 cup mayonnaise
  • 2 tbsp rice vinegar
  • 6 oz fresh fish (salmon or tuna), diced
  • 2 tbsp sriracha sauce (adjust to taste)
  • 3 nori sheets, cut into strips
  • 2 green onions, chopped
  • 2 tbsp sesame seeds
  • Sweet soy sauce for drizzling (optional)

Instructions

  1. Rinse sushi rice under cold water until clear; cook according to package instructions.
  2. In a bowl, mix cooked rice with mayonnaise and rice vinegar until creamy.
  3. Fold in diced fish and sriracha sauce gently.
  4. Preheat oven to 350°F (175°C). Spread half of the rice mixture in a greased baking dish.
  5. Layer nori strips over the rice, then top with the remaining rice mixture and sprinkle with sesame seeds.
  6. Bake for 20–25 minutes until golden brown and bubbly.
  7. Serve hot with additional nori strips on the side.
