  • ½ cup unsalted butter, cold and cubed
  • 45 tbsp ice water
  • 3 cups fresh tomatoes, sliced
  • ¼ cup fresh basil, torn
  • 1 cup grated cheese (like Gruyère)
  • Salt and pepper to taste
  • Balsamic glaze (optional)

Instructions

  1. Combine flour and salt in a bowl. Cut in cold butter until crumbly. Slowly add ice water until dough forms; avoid overmixing.
  2. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  3. Preheat oven to 375°F (190°C).
  4. Roll out chilled dough into a circle, then transfer to a tart pan.
  5. Layer sliced tomatoes on the crust, sprinkle cheese on top.
  6. Bake for 30-35 minutes or until golden brown and cheese is melted. Cool slightly before slicing.
