Ingredients

  • 2 cups granulated sugar
  • 1 cup cold water (divided)
  • 3/4 cup cornstarch
  • 1/4 cup lemon juice
  • 2 tablespoons rose water or orange blossom water
  • 1/2 cup chopped pistachios or walnuts
  • Cornstarch for dusting

Instructions

  1. Grease an 8-inch square pan or line it with parchment paper.
  2. In a saucepan, combine sugar and 1 cup of water over medium heat until dissolved. Bring to a boil, then add lemon juice and simmer for about 10 minutes.
  3. In a separate bowl, whisk cornstarch with the remaining 1 cup of water until smooth. Gradually add this mixture to the boiling syrup while stirring continuously until thickened and translucent (15-20 minutes).
  4. Remove from heat and stir in rose or orange blossom water and nuts.
  5. Pour the mixture into the prepared pan and let it cool at room temperature for several hours or overnight until set.
  6. Dust a cutting board with cornstarch, invert the pan onto it, and cut into squares. Toss each piece in cornstarch to prevent sticking.
