  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 cups fresh spinach or kale
  • 1 can (14.5 oz) diced tomatoes with herbs
  • 6 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon

Instructions

  1. Prep Your Ingredients: Gather and chop all ingredients into bite-sized pieces for even cooking.
  2. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add garlic, carrots, and celery; sauté for about 3-4 minutes until fragrant.
  3. Cook Chicken: Add chicken breasts to the pot and cook for about 5 minutes on each side until lightly browned.
  4. Add Broth & Tomatoes: Pour in chicken broth and canned tomatoes; bring to a boil then reduce heat to simmer for 20-25 minutes until chicken is cooked through.
  5. Incorporate Greens: Stir in spinach or kale during the last 5 minutes of cooking until wilted.
  6. Shred & Season: Remove chicken from pot, shred with two forks, return it to the soup along with lemon juice, and adjust seasoning as needed before serving.
