  • 1 cup cocoa powder
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • ½ cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • ½ cup heavy cream or marshmallow fluff

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together cocoa powder, flour, baking soda, and salt.
  3. In another bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Mix in eggs one at a time and add vanilla extract.
  5. Gradually fold the dry mixture into the wet ingredients using a spatula.
  6. Drop spoonfuls onto prepared baking sheets and bake for 10-12 minutes until they spring back when lightly touched.
  7. While cooling, whip powdered sugar with heavy cream or marshmallow fluff until smooth.
  8. Once cookies are cooled, spread or pipe filling onto one cookie half and top with another.
