  • 1 large sweet onion, diced
  • 4 cloves garlic, minced
  • 1 cup bell peppers (mixed colors), diced
  • 1 can (15 oz) tomato sauce
  • 2 cups low-sodium beef broth
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing the onions and bell peppers and mincing the garlic.
  2. In a large pot over medium-high heat, drizzle oil and sear the beef until browned on all sides (about 4-5 minutes per side).
  3. Add onions, bell peppers, and garlic; sauté until onions are translucent (3-4 minutes).
  4. Pour in tomato sauce and beef broth; add cumin, oregano, salt, and pepper. Stir well to combine.
  5. Add bay leaves and bring to a gentle boil. Reduce heat to low, cover the pot, and simmer for 1.5-2 hours until the beef is fork-tender.
