  • 4 cups fresh green cabbage, chopped
  • 1 cup bell peppers, sliced (mixed colors)

  • ¼ cup low-sodium soy sauce
  • 2 tsp sesame oil
  • 2 green onions, chopped
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
  • Cooked rice or noodles (optional)

Instructions

  1. Chop the chicken into bite-sized pieces and prepare the vegetables by slicing the cabbage and bell peppers and mincing the garlic and ginger.
  2. Heat a large wok or skillet over medium-high heat with a drizzle of oil until hot.
  3. Add the chicken to the pan; stir-fry for about 5-7 minutes or until golden brown and cooked through.
  4. Toss in the cabbage, bell peppers, garlic, and ginger; stir-fry for another 3-4 minutes until veggies are tender yet crisp.
  5. Pour in the soy sauce mixture, stirring well for about 1-2 minutes until everything is evenly coated.
  6. Finish with green onions on top just before serving.
