  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 2 tsp fresh thyme leaves (or 1 tsp dried)
  • 2 tbsp brown sugar (dark brown preferred)
  • 3 tbsp low-sodium soy sauce
  • 1 tsp pimento (allspice)
  • 1 Scotch bonnet pepper, whole (adjust for spice level)
  • 1 cup chicken broth or water
  • Salt and pepper to taste
  • 2 tbsp vegetable oil for cooking

Instructions

  1. Rinse the chicken under cold water and pat dry. Season generously with salt and pepper.
  2. In a large bowl, combine the chicken with minced garlic, sliced onion, chopped bell peppers, thyme, and pimento. Let marinate for at least 2 hours or overnight for best results.
  3. Heat vegetable oil in a Dutch oven over medium-high heat. Add marinated chicken skin-side down and sear until golden brown on all sides (about 6-8 minutes). Remove from pot.
  4. Sauté remaining onions and peppers in the same pot until softened (about 5 minutes). Stir in brown sugar to caramelize slightly before returning the chicken to the pot.
  5. Pour in soy sauce and add broth or water until covered. Bring to a simmer.
  6. Cover and let simmer on low heat for about 40-50 minutes until chicken is tender. Serve hot over steamed rice or alongside fried plantains.
