Ingredients

Scale
  • 2 lbs bone-in chicken pieces (thighs or drumsticks)
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, chopped (red preferred)
  • 1 small bunch fresh thyme
  • 2 carrots, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 cup chicken broth
  • 2 tbsp brown sugar
  • 5 pimento peppers (allspice berries)
  • 2 tbsp vegetable oil

Instructions

  1. 1. Prep: Wash all vegetables and pat chicken dry with paper towels.
  2. 2. Sear Chicken: Heat vegetable oil in a pot over medium-high heat. Add chicken pieces skin-side down and brown for about 4-5 minutes per side.
  3. 3. Cook Aromatics: Remove chicken and sauté onions and garlic in the same pot until translucent (about 3 minutes).
  4. 4. Add Vegetables: Stir in bell pepper and carrots; sauté until softened (about 3-4 minutes).
  5. 5. Create Sauce: Return chicken to the pot. Pour in soy sauce and chicken broth; stir in brown sugar while scraping up any browned bits from the bottom.
  6. 6. Simmer: Cover and reduce heat to low; let simmer for 30-40 minutes until chicken is tender.
