Instructions

  1. Preheat oven to 325°F (165°C). Season chuck roast with garlic powder and black pepper, then place in a roasting pan.
  2. Roast for 1 to 1.5 hours until internal temperature reaches 135°F (57°C) for medium-rare.
  3. Meanwhile, sauté thinly sliced onions in olive oil over medium heat until caramelized, about 20–25 minutes.
  4. In a saucepan, combine beef broth with drippings from the roast and simmer for 10 minutes.
  5. Once the beef has rested for at least 15 minutes, slice it thinly against the grain.
