  • 3 lbs chuck roast
  • 1 oz ranch dressing mix
  • 1 oz au jus gravy mix
  • 6 pepperoncini peppers (whole)
  • 1 cup low-sodium beef broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 medium onion, sliced
  • 3 garlic cloves, minced

Instructions

  1. Preheat a large skillet over medium-high heat and add oil. Sear the chuck roast on all sides until browned.
  2. In a slow cooker, sprinkle ranch dressing mix and au jus gravy mix over the seared roast. Pour beef broth until it covers half of the meat.
  3. Place sliced onions around the roast and add pepperoncini peppers.
  4. Cover and cook on low for 8 hours until tender.
  5. Shred the beef using two forks and mix with the juices before serving over mashed potatoes or in sandwiches.
