Ingredients

Scale
  • 1 medium head of cauliflower (about 600g)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper (adjust to taste)
  • Juice of 1 lemon (about 2 tablespoons)
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prep the Cauliflower: Remove leaves from the cauliflower head, cut it into quarters, and chop off the thick stem. Rinse under cold water.
  2. Rice It Up: In a food processor, pulse the florets until they resemble rice grains—be careful not to over-process.
  3. Sauté: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add riced cauliflower and cook for 5–7 minutes until tender but still slightly crunchy, stirring occasionally.
  4. Season: Sprinkle with salt, pepper, and fresh lemon juice, tossing in chopped herbs just before serving.
