  • 6 dried ancho chiles
  • 4 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 2 tsp cumin powder
  • 1 tsp Mexican oregano
  • 1 (15 oz) can tomato sauce
  • 1 cup vegetable broth or water
  • 1 tsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Rinse the dried ancho chiles under cold water, then remove stems and seeds.
  2. Soak the chiles in boiling water for about 15-20 minutes until soft.
  3. In a skillet over medium heat, sauté chopped onions and minced garlic in olive oil until translucent (3-5 minutes).
  4. Drain the chiles and add them to a blender with sautéed onions, garlic, cumin, oregano, tomato sauce, vegetable broth or water, sugar, salt, and pepper. Blend until smooth.
  5. Pour the mixture back into the skillet and simmer over medium heat for 10-15 minutes, stirring occasionally.
