  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 28 oz canned diced tomatoes (with juice)
  • 15 oz canned kidney beans (drained and rinsed)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 cups beef broth or water
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add a splash of oil and sauté the chopped onion and bell peppers until tender (about 5 minutes).
  2. Add the ground beef, breaking it apart with a spatula until browned. Drain excess fat.
  3. Stir in the minced garlic, chili powder, cumin, salt, and pepper. Cook for one minute.
  4. Add the canned tomatoes and drained kidney beans; mix well.
  5. Pour in the beef broth or water until everything is just covered. Bring to a boil then reduce heat to low.
  6. Simmer uncovered for at least 30 minutes. Adjust seasoning as needed before serving.
