  • 4 boneless, skinless chicken breasts
  • 8 oz fresh mushrooms (button or cremini), sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides (about 6-7 minutes per side). Remove chicken from the skillet and set aside.
  2. In the same skillet, add minced garlic and sliced mushrooms. Cook for about 5 minutes until mushrooms are tender.
  3. Pour in the chicken broth while scraping up any browned bits from the pan. Let simmer for 3 minutes.
  4. Stir in heavy cream and thyme; let simmer until slightly thickened (about 5 minutes). Adjust seasoning as needed.
  5. Return the seared chicken to the skillet and allow it to heat through for a couple of minutes.
  6. Serve over rice or pasta, garnished with fresh parsley.
