  • 8 oz provolone cheese, sliced
  • 1 cup bell peppers (optional), thinly sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by slicing the ribeye against the grain, and onions and bell peppers into strips.
  2. Heat olive oil in a skillet over medium heat. Add onions (and peppers if using) and sauté until soft and caramelized (8-10 minutes).
  3. Push vegetables aside and increase heat slightly. Add ribeye slices, seasoning with salt and pepper. Cook until browned (3-4 minutes).
  4. Layer provolone cheese over the steak mixture and cover briefly until melted (1-2 minutes).
  5. Slice hoagie rolls open and toast lightly on another skillet or under the broiler until golden brown.
  6. Assemble by filling toasted rolls with the cheesy steak mixture and serve immediately.
