  • 8 large flour tortillas
  • 3 cups shredded cheese (2 cups sharp cheddar, 1 cup Monterey Jack)
  • 2 cups cooked protein (chicken, beef, or beans)
  • 1 cup bell peppers, sliced
  • 1 cup onion, sliced
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp chili powder
  • Sour cream and salsa for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté sliced bell peppers and onions until softened.
  3. On the baking sheet, lay half of the tortillas down. Spread cheese evenly on each tortilla followed by layers of protein and sautéed veggies. Top with remaining tortillas.
  4. Bake for 10-12 minutes until golden brown and cheese is melted.
  5. Allow to cool slightly before slicing into wedges and serve with sour cream and salsa.
