  • 1 cup bell peppers (mixed colors), chopped
  • 1 medium yellow onion, chopped
  • 2 tbsp taco seasoning
  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup shredded sharp cheddar cheese
  • Tortilla chips or tortillas for serving

Instructions

  1. Heat 2 tbsp olive oil in a large skillet over medium heat. Add chopped onion and bell peppers; sauté until softened.
  2. Add ground beef or turkey, breaking it apart as it cooks until browned (about 5-7 minutes).
  3. Stir in taco seasoning and canned tomatoes with juice; mix well.
  4. Fold in rinsed black beans and cook for another 3-4 minutes until heated through.
  5. Sprinkle shredded cheese on top; cover briefly until melted (around 2-3 minutes).
  6. Serve hot with tortilla chips or warm tortillas.
