  • 4 oz goat cheese
  • 1 cup walnuts, toasted

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the beets clean, wrap them individually in aluminum foil, and roast for 45-60 minutes until tender.
  2. While the beets are roasting, crumble the goat cheese into small pieces and set aside.
  3. Toast the walnuts in a skillet over medium heat for about 5-7 minutes until golden brown.
  4. Once cooled, peel the roasted beets using paper towels and slice them into wedges or cubes.
  5. In a large bowl, toss mixed greens with olive oil, balsamic vinegar, salt, and pepper. Layer on beet slices, sprinkle with goat cheese and toasted walnuts.
