  • 8 oz rotini pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach or kale
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Cook the rotini pasta according to package instructions until al dente (about 8-10 minutes). Reserve 1 cup of cooking water before draining.
  2. In a large skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant (about 1 minute).
  3. Add halved cherry tomatoes and spinach or kale to the skillet. Cook until softened (3-4 minutes), stirring occasionally.
  4. Drain the cooked pasta and add it to the skillet with Italian seasoning, salt, and pepper. Mix well!
  5. For a creamy sauce, gradually stir in reserved pasta water until desired consistency is reached, then mix in grated Parmesan until melted.
  6. Serve hot with additional Parmesan on top and garnish with fresh basil if desired.
