  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced fire-roasted tomatoes
  • 4 cups tortilla chips (thick)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream (for topping)
  • 3 green onions, sliced

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Add taco seasoning and water per package instructions; stir until well combined.
  4. Mix in black beans and diced tomatoes; heat through for about 5 minutes.
  5. In a baking dish, layer half of the tortilla chips, followed by half of the beef mixture and half of the cheese. Repeat layers.
  6. Cover with aluminum foil and bake for 20 minutes. Remove foil during the last 5 minutes for a golden crust.
  7. Let rest for 5 minutes before serving with sour cream and sliced green onions on top.
