  • 2 lbs chuck roast (or beef stew meat)
  • 5 dried guajillo chiles
  • 1 medium onion (chopped)
  • 4 garlic cloves (minced)
  • 2 cups low-sodium beef broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper (to taste)

Instructions

  1. Prep your chiles by removing stems and seeds; soak them in hot water for 15 minutes until softened.
  2. In a large pot over medium-high heat, sear the chuck roast in oil until browned on all sides (about 5 minutes per side). Remove and set aside.
  3. Sauté chopped onions and minced garlic in the same pot until fragrant (about 3 minutes).
  4. Blend the soaked chiles with some soaking liquid, cumin, and oregano until smooth.
  5. Return the beef to the pot, add the blended sauce and beef broth, stir well, and bring to a simmer.
  6. Cover and reduce heat; let simmer for 2-3 hours until fork-tender.
