  • 1 medium onion, diced
  • 2 bell peppers (red and yellow), chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 2 cups cooked pasta or rice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add olive oil and sauté onions and bell peppers until soft.
  3. Add ground turkey; cook until browned and crumbly.
  4. Stir in garlic, salt, pepper, oregano, and paprika; cook for an additional minute.
  5. Mix in diced tomatoes and cooked pasta or rice; combine well and cook for 5 minutes.
  6. Transfer to a greased baking dish, top with mozzarella and cheddar cheeses, then bake for 25-30 minutes until bubbly.
