  • 1 lb shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes (adjust to taste)
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to boil. Add pasta and cook until al dente according to package instructions. Reserve some pasta water before draining.
  2. Prepare the shrimp: In a large skillet over medium heat, combine olive oil and half the butter. Once melted, add shrimp seasoned with salt and pepper. Cook until pink and opaque (about 2-3 minutes per side), then remove from skillet.
  3. Make the sauce: Lower heat slightly; add remaining butter and minced garlic to the same skillet. Sauté until fragrant (about 1 minute).
  4. Combine: Return shrimp to the skillet along with drained pasta, red pepper flakes, lemon juice, and parsley. Toss gently for about 2 minutes.
  5. Adjust consistency: Add reserved pasta water gradually until desired sauce thickness is achieved. Taste and adjust seasoning if necessary.
  6. Serve: Plate immediately and garnish with extra parsley or grated parmesan if desired.
