  • 8 oz fettuccine (or pasta of your choice)
  • 1 can (28 oz) whole peeled tomatoes
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • ¼ cup fresh basil leaves, torn
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • ½ tsp crushed red pepper flakes (optional)

Instructions

  1. Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. Sauté Garlic: In a large skillet over medium heat, heat olive oil and sauté minced garlic until fragrant.
  3. Add Tomatoes: Pour in canned tomatoes and gently break them down with a wooden spoon.
  4. Stir in Cream: Lower the heat and mix in heavy cream. Season with salt, pepper, and crushed red pepper flakes; allow to simmer.
  5. Combine Pasta: Toss cooked fettuccine into the sauce, stirring to coat well for about 2-3 minutes on low heat.
  6. Finish with Cheese & Basil: Remove from heat and incorporate grated Parmesan cheese until melted. Top with fresh basil before serving.
