  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 package (16 oz) potato gnocchi
  • 2 cups fresh spinach
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Dice the chicken breasts into bite-sized pieces. In a large pot over medium heat, add a splash of oil and cook the chicken until golden brown.
  2. Once the chicken is cooked through, add minced garlic, chopped carrots, and celery. Sauté for about 5 minutes until vegetables are softened.
  3. Pour in the chicken broth along with oregano and thyme; bring to a simmer while stirring occasionally.
  4. Stir in the heavy cream and then add the gnocchi. Simmer gently until the gnocchi float and are tender (about 5 minutes).
  5. Just before serving, stir in fresh spinach until wilted. Serve hot with crusty bread.
