Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ cup unsweetened cocoa powder
  • 1½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 4 large eggs (room temperature)
  • 1 cup coconut milk
  • 1 cup sweetened coconut flakes
  • 1 cup toasted pecans, roughly chopped
  • 4 oz German chocolate bar

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans with butter or cooking spray.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk flour, baking powder, cocoa powder, and salt. Gradually add to the wet mixture without overmixing.
  4. Pour in the coconut milk and stir gently until smooth.
  5. Divide batter between the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. For frosting, melt German chocolate with a splash of coconut milk over low heat until smooth. Stir in toasted pecans and coconut flakes after cooling slightly.
  7. Assemble by layering cakes with frosting in between and covering the entire cake with remaining frosting.
