  • 1 lb ground beef or lamb
  • 1 medium yellow onion, chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 cups mashed potatoes (made from about 2 large Yukon Gold potatoes)
  • 2 tbsp butter
  • ¼ cup milk
  • Salt and pepper to taste

Instructions

  1. Sauté the onions and garlic in olive oil over medium heat until translucent (3-4 minutes).
  2. Add the ground meat, browning it evenly. Mix in the diced carrots and peas; cook for another 5 minutes.
  3. Pour in the beef broth and add salt, pepper, and thyme; simmer on low for 10 minutes until slightly thickened.
  4. Boil peeled potatoes until fork-tender (about 15 minutes). Drain and mash with butter and milk until smooth.
  5. Layer the meat mixture in a baking dish and top with creamy mashed potatoes. Preheat oven to 400°F (200°C) and bake uncovered for 25-30 minutes until golden brown.
