  • 2 medium sweet onions, thickly sliced
  • 4 cloves garlic, crushed
  • 2 cups beef broth (low-sodium)
  • 1 cup dry red wine
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar (packed)
  • 1 tsp fresh thyme (or ½ tsp dried)

Instructions

  1. Trim excess fat from short ribs and pat dry.
  2. Sear short ribs in a hot skillet until browned on all sides.
  3. In the same skillet, sauté onions and garlic until translucent.
  4. Combine seared ribs, onions, garlic, beef broth, red wine, Worcestershire sauce, brown sugar, and thyme in a slow cooker.
  5. Cook on low for 6-8 hours or high for 4-5 hours until tender.
  6. Serve over mashed potatoes or polenta with sauce drizzled on top.
